Old//Cupcakes
So why did I bake chocolate cupcakes for everyone on my birthday? Because I liked seeing people excited for sugar. Yes like a good OLD kitchen dweller, my spirits are lifted up high when people enjoy what I made. It didn't matter that they didn't know that it was my birthday and took the cupcakes, having people smile around me when they should be stressed over exams = totally awesome. Serious.
Maybe I should have been like J. and kept my birthday quite from the church people, because if your birthday falls on a day where people gather together for youth group or service, they sing. Yup, so last Friday I aged a year - I like how it always seems that a person ages an entire year on that one day.
Since I lost (deleted tumblr) my beloved go-to chocolate buttermilk cake recipe I normally turned to, I adapted from a recipe from Mel's Kitchen Cafe. The frosting was a mess but that's fine. =)
It's kind of funny how I keep making loads of chocolate cupcakes - I make them to suit the taste buds for the majority of these silly food machines.
Chocolate "Buttermilk" Cake
1 1/3 cups unsweetened cocoa powder
2 1/2 cups all purpose flour
2 cups sugar
2 1/2 tsp baking soda
1 1/4 tsp baking powder
1 1/4 tsp salt
2 large eggs plus 1 large egg yolk
1 ¼ cups warm water
1 ¼ cups milk
1 tbsp vinegar
½ cup plus 2 tablespoons vegetable oil
1 ½ tsp vanilla extract
Preheat oven to 350'F. Mix vinegar with milk and set aside for 10 mins. Mix all the dry ingredients together. The mix in the rest of the ingredients and the vinegar milk combo too. Pour batter into prepared cupcake tins 2/3 full. Bake until a toothpick comes out clean with moist crumbs. I have no idea how long that took. For the cupcakes, it would be best to take them out right at the moment they were done, otherwise they can get a bit dry. Cool down and frost.
