Matcha//French Buttercream


Remember how I mentioned that I didn't enjoy making Swiss Meringue Buttercream because of it's process and the taste? Well I found something that was easier (in my opinion) to make.

aka Pâte á bombe buttercream (yolk based)

Although it still has an insane taste of butter, it's less obvious. Egg whites do not have to be whipped up, instead egg yolks are used.  Beaten until pale lemon yellow in colour. Hot matcha sugar syrup slowly incorporated. Soft butter cubes whipped up with the syrup egg mixture. Voila! Matcha green tea buttercream!


I made a green tea cake to share. Cake at the library. Fun. Four layers of cake, two layers of matcha buttercream, two layers of chocolate cream, one layer of chocolate glaze.

Matcha Buttercream (French version)

4 egg yolks
1/2 water
1/2 sugar (if you want a sweet butter cream add a few more tablespoons)
5-7 tsp matcha green tea powder
1/2 cup butter (cut into cubes, room temperature)
  • Using an electric mixer and a large bowl, beat the egg yolks are a light pale colour (think pastel yellow). Set aside 
  • Whisk water, sugar, and green tea powder in a sauce pan. Boil without stirring until around 115'C. It would have thickened a tad bit by this stage. Turn off the heat.
  • Slowly pour a couple tablespoons of the sugar syrup into the egg yolk with the electric mixer off so then you will not get strands of sugar bits. Then whip/beat the egg yolk and the sugar syrup that was added in. Continue with the addition of syrup and beating until the syrup is incorporated with the yolks. It's okay if you do not end up using all the syrup leaving a couple tablespoons behind. No big deal.
  • Add the softened butter cubes into the egg syrup mixture and beat until it's nice and smooth. If it's not thick enough, you can add a couple more butter cubes.  
  • Refrigerate it =) The buttercream melts very easily.
**Optional: add in 1/2 cup to 3/4 cup melted white chocolate to the egg syrup mixture before adding the butter.

If you have left over matcha buttercream, put it on a slice of bread! It's like dessert =)
